Ingredients
Sunflower Seed Pâté
1 cup (150 g) raw sunflower seeds
¾ cup (180 ml) water
2 tbsp nutritional yeast
2 tbsp lemon juice
1 garlic clove
1 tsp Dijon mustard
1 tsp fresh thyme leaves
½ tsp sea salt
¼ tsp freshly ground black pepper
Cumberland Glaze
½ cup (125 ml) Cumberland sauce
1 tbsp maple syrup
1 tsp lemon juice
Pinch of black pepper
Baby Leaf Salad
4 cups baby mixed leaves
½ cucumber, thinly sliced
4 cherry tomatoes, halved
1 tbsp microgreens
Simple Salad Dressing
2 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp Dijon mustard
Pinch of sea salt and pepper
To Serve
Spelt crackers or crispbread
Optional: toasted seeds, fresh herbs or a few pomegranate seeds

Method
1. Soak the seeds
Rinse the sunflower seeds thoroughly. Cover with water and soak for 2–4 hours, or overnight for an especially silky pâté. Drain and rinse well.
2. Blend the pâté
Place the soaked seeds in a food processor with the water, nutritional yeast, lemon juice, garlic, Dijon, thyme, salt and pepper. Blend until creamy. Scrape down the sides as needed. If the mixture is too firm, add water one tablespoon at a time.
3. Shape and chill
Spoon the pâté into a small mould or ramekin. Smooth the surface with the back of a spoon. Cover and refrigerate for at least 1 hour so the pâté firms and the flavours settle.
4. Make the Cumberland glaze
Whisk together the Cumberland sauce, maple syrup, lemon juice and black pepper. Taste and adjust the balance: it should be fruity, tangy and just sweet enough to cut through the richness of the pâté.
5. Prepare the salad
Combine the baby leaves, cucumber, tomatoes and microgreens. Keep the leaves crisp and avoid dressing them too early.
6. Dress lightly
Whisk the olive oil, lemon juice, Dijon, salt and pepper. Drizzle lightly over the salad and toss gently.
7. Assemble
Unmould the chilled pâté onto a serving plate. Spoon the Cumberland glaze over the top so it falls naturally down the sides. Arrange the salad beside it and finish with spelt crackers.
Texture Matters
For a smooth pâté, blend longer and add liquid gradually. For a more rustic country pâté, stop blending while a little texture remains. If you are serving it as a canapé, keep it slightly firmer so it can sit neatly on crackers.
