Bake: 25–30 minutes
Ingredients
- 500 g wholemeal spelt flour
- 2 tsp baking powder
- 1 tsp sea salt 350–380 ml water
- 2 tbsp sesame seeds, plus extra for topping (Optional)
- 1 tbsp extra virgin olive oil for a softer crumb

- In a large bowl, combine the spelt flour, baking powder, salt, and sesame seeds.
- Add the water (and olive oil, if using) and mix until a soft dough forms. Avoid overmixing.
- Divide the dough into 6–8 portions and shape into rounded triangle rolls.
- Place on the baking tray and lightly sprinkle with extra sesame seeds. You can score the tops with a sharp knife if desired.
- Bake for 25–30 minutes, until golden brown and the rolls sound hollow when tapped underneath.
- Transfer to a wire rack and allow to cool for at least 15 minutes before serving.
Notes
These rolls are made without yeast, making them quick and easy to prepare. The olive oil is optional but gives a slightly softer texture. Best enjoyed warm with hummus, avocado, nut butter, or a bowl of hearty soup. They also freeze well for up to 3 months.
